Snowy Day, Homemade Soup, and Snowstorm Smoothies

 Hello!  It's Wednesday and like many people, Steve and I are snowed in today. We are grateful that the campus is closed so neither of us has to brave the elements and drive outside. Looking outside the window from home, the snow is beautiful. 

Steve and I originally planned on making a tasty barbeque chicken crock pot recipe, but there was not any chicken left at the grocery store! (Think the TP shortage in 2020!)  So, we defaulted to our trusty-tried-and-true vegetable soup: One bottle of low-sodium V8 juice, canned peas, diced potatoes, and a lot of different herbs, pepper, and spices. (It's always good to have another plan.) We'll make some brown rice in the rice maker. Then, we pour the soup on top of the rice. Yum! 

I also made Snowstorm Smoothies today! Here is the recipe I used:  unsweetened vanilla almond milk, frozen bananas, blueberries, and honey. Blend and enjoy.  A trick I learned recently is if bananas are ripening too fast, I chop them up and freeze them to use later. The frozen bananas are like flavored ice cubes and make the smoothie extra good! Also, the banana peels can be tossed into a composter to create soil for your garden.
